Tapestry coffee expands in Lakeville.

The trio of college friends-turned-entrepreneurs behind Tapestry Coffee—Brady Heerema, and Kiley and Scott Van Daalen—has proved that holding passion at the center of your plans is a recipe for success. In the past few years, they’ve opened two coffee shops in Lakeville and started roasting coffee in Bloomington.

The trio met at the University of Northwestern St. Paul, Scott and Heerema as randomly assigned freshman roommates, and Scott and Kiley on her first day of classes the following year. During COVID-19, the three friends were in separate careers—Scott served as a pastor, Kiley worked as a photographer, and Heerema was a barista at Quixotic Coffee—when Scott and Kiley started to talk about opening a coffee shop. They caught up with Heerema one day at work and convinced him to join in their plans.

In 2021, the group bought a space in downtown Lakeville (formerly Mainstreet Coffee), and renovated and rebranded as Tapestry Coffee. “Originally, when we opened, our goal was to bring the experience of a Minneapolis-St. Paul coffee shop to Lakeville,” Scott says. “I remember standing in front of the city council to get our licensing and making that pitch.”

At Tapestry, bringing that elevated experience to Lakeville means housemade, unique syrups and a rotating special menu of drinks. Fan-favorite flavors from past seasons’ specialty menus include Lemon Poppyseed and Strawberry Rhubarb in the summer and a Pomegranate and Rosemary “Mistletoe” in the winter. This fall, customers can expect to find a cozy menu inspired by pumpkin and maple flavors.

Kiley, a tea drinker at heart, champions the housemade chai mixed with nitro cold brew, while Heerema enjoys cycling through the seasonal menu and Scott appreciates a well-crafted cold brew or cappuccino. At the downtown location, Tapestry serves up breakfast sandwiches, specialty toast and bagels.

Last July, the second location of Tapestry opened near the intersection of County Road 46 and Cedar Avenue in the former Lakeville Donut Star location, which the Van Daalen’s and Heerema purchased in 2025. Tapestry Coffee’s Crossings location serves up the same drink menu as the shop’s downtown location along with a selection of pastries and grab-n-go food. It offers a bright, open seating area with kid-friendly spaces and bar seating along its large windows.

After opening Tapestry’s downtown location, the trio turned their attention to establishing a roastery, so they can ensure Tapestry serves ethically grown and imported coffee, using beans that are as fresh as possible. “I think for our customers, they like that we offer a holistic experience,” Scott says. “If you come in and get a drink, every part of it was crafted by us.”

In addition to crafting top quality drinks at both locations, Tapestry owners also seek to offer a gathering place for the Lakeville community. At first, the downtown location of Tapestry was a quick pit stop for customers. To encourage people to pause, relax and enjoy their coffee, the team redid the interior to create a more welcoming space that people want to spend time in. “I would say the thing that is more important to us is that people feel good when they leave,” Scott says. “We want people to have a really good latte, but we also want them to get it from a barista [who’s] smiling and making eye contact and making them feel good about it.”

Working with close friends, especially those who were each other’s best man in their weddings, has its ups and downs, but the Van Daalens and Heerema have taken it in stride over the years. “We all have ups and downs, and that would be present in a business partnership even if we didn’t know each other super well,” Heerema says. “I realistically don’t know how all of this would work if we weren’t friends and if we didn’t love each other. Small business ownership is hard, and for me, it’s everything to know that I’ve got my best friends in the foxhole with me.”
